Cheese Burger Pie - Experiment 2

Ingredients
2 9″ pie crusts
1 lb 8 oz 80-20 ground beef
2 eggs
1 cup of seasoned bread crumbs
1 1/4 cup whole milk
1/3 green bell pepper
1/4 white onion
5 green onions
1/2 cup shredded cheese
1/2 teaspoon black pepper
1/2 teaspoon sea salt

Instructions

Preheat oven to 450f, press one crust into a 9″ pie dish, cover bottom with crust weights and bake for 12 minutes. Then lower oven to 350f.


Pour milk into a large mixing bowl, add 2 beaten eggs and whisk together. Add bread crumbs, bell pepper, green onions, white onion. Mix thoroughly and place in refrigerator for half an hour. The liquid is absorbed and held by the bread crumbs.


Add meat and knead until uniform mixture and consistency.


Put half of the meat mixture into the pie dish with the baked lower crust.

Level the beef and add cheese.I use shredded Mac & Cheese blend.

Add and level the rest of the meat. Apply the top crust, seal to dish and put crust protectors or aluminum foil around the edges. Cut vent slits in crust center.


Bake to 160f, about 40 minutes. Remove the outside crust protectors. Turn on broiler, raise the pie in the oven and broil for approx 5 minutes to brown and crisp the crust.

Worked for me. Tastes good and can be served with brown gravy if desire. My approach is to cut a portion for me, 1/4 pie max spread over two days, and give the rest away. I think I will try making this is small pie tins.
